We sold our salsa at a local farmer’s market for YEARS and made some great friends! We got a message from one of them today telling us they used our álarita Salsa in a recipe. We reviewed it and it has everything we’re looking for in a recipe, so we posted it!

Now let’s Get Our Green On and make some Chicken Cups!
Micro-Green Chicken Cups
Mix In A Bowl
- 3 COOKED Chicken Breast Halves (about 2 pounds)
- 2 Cups Cheddar Cheesed Shredded
- 1 Cup álarita Salsa
- 1 Cup Enchanted Fungi Micro-Greens
- 1/2 Cup Ranch Dressing
- 1/2 Cup Green Onion Chopped
Mix In A SEPARATE Bowl
- 1.5 Cup Bisquick Mix
- 1.5 Cup Milk Skim or 1%
- 6 Eggs
- 3 Cups Garbanzo Beans or White Beans Instead of Chicken
- 36 Muffin Cups
- 1 Muffin Pan
Preheat oven to 375 degrees.
CHICKEN MIXTURE: In a bowl, mix the COOKED Chicken, Cheese, Salsa, Micro-Greens, Ranch & Green Onion.
EGG MIXTURE: In a separate bowl, mix the Bisquick, Milk & Eggs.
Place muffin cups into the muffin Pan and spoon 1 Tablespoon of EGG MIXTURE into each cup. Next, scoop 2 Tablespoons of CHICKEN MIXTURE into each cup and top each off with 1 Tablespoon of EGG MIXTURE.
Bake for 30 minutes or until you can insert a fork into a muffin and it come out clean.
Garnish with: Salsa, Micro-Greens, Sour Cream or Fresh Cilantro! Enjoy!
