Stewed Rice with Pigeon Peas
1 medium onion chopped
1 tablespoon of olive oil
1 tablespoon of alarita dry rub
2 teaspoons of minced garlic
Saute all together until onion is cooked.
1 can of Pigeon Peas (I use Goya)
1-16oz jar of alarita Salsa (any flavor)
Simmer 5 minutes
2 cups of rice (I use Uncle Ben’s)
1 1/2 cups of water
1 tablespoon of butter (optional)
Cover pot and bring to a boil. Reduce to medium heat/low and stir occasionally. When rice appears dry on top reduce heat to low and cook 10-15 more minutes or until rice is done.
